This lightly peated single malt was found hiding away after 5 years in a cask that held peated malt on two occasions before holding golden promise Single Malt. Playing with light heather and sweet peach, we doubled down and clobbered it with an additional 2 months in a Peach Brandy Cask. The nose will lull you into dreams of peach cobbler and spice, the pallet flips the script, revealing the peaty origin story to the sweet malted barley.

American Single malt, aged 4 years 344 days. Spending the first four years in ex-Oloroso Sherry and then transferred into a used KY bourbon barrel for 6 months. After discovering this diamond in the rickhouse, we took it up one more level by finishing it for 3 more months in an ex-Pineapple Brandy Cask.
This cherry-pineapple dump cake on the nose, transforms into sweet heat on the pallet.
